Introduction
Shahi Paneer, a regal dish hailing from the royal kitchens of India, is a rich and creamy delicacy that epitomizes indulgence. 200 grams paneer (cottage cheese), cubed
2 tablespoons ghee or oil
1 large onion, finely chopped
1 tablespoon ginger-garlic paste
2-3 tomatoes, pureed
1/4 cup cashew nuts
1/4 cup milk
1/2 cup fresh cream
1 teaspoon garam masala
1 teaspoon turmeric powder
1 teaspoon red chili powder
1/2 teaspoon cumin seeds
2-3 green cardamom pods
1 bay leaf
Salt to taste
Fresh coriander leaves, chopped for garnish
Prepare the Cashew Paste:
Soak the cashew nuts in warm water for 15-20 minutes.
Drain the water and blend the cashews with milk to form a smooth paste. Set aside.
Cook the Paneer:
Heat 1 tablespoon of ghee or oil in a pan over medium heat.
Lightly fry the paneer cubes until they are golden brown. Remove and set aside.
Prepare the Gravy:
In the same pan, add the remaining ghee or oil.
Add cumin seeds, cardamom pods, and bay leaf. Sauté for a minute until fragrant.
Add the finely chopped onions and cook until they turn golden brown.
Add ginger-garlic paste and sauté for another minute.
Cook the Tomatoes:
Add the tomato puree to the pan and cook until the oil starts to separate.
Add turmeric powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
Add Cashew Paste and Cream:
Add the cashew paste to the pan and mix well.
Cook for a few minutes until the gravy thickens.
Lower the heat and add fresh cream. Stir continuously to avoid curdling.
Combine Paneer and Spices:
Add the fried paneer cubes to the gravy.
Sprinkle garam masala over the dish and mix gently.
Simmer and Serve:
Let the Shahi Paneer simmer on low heat for 5-7 minutes, allowing the flavors to meld together.
Garnish with fresh coriander leaves.
